Hot Banana Peppers are 3 to 4 inches long with a pale to dark green color and should be firm and free of blemishes. The seeds and inner membrane are the hottest part and should be removed if you want milder results. Be careful to wash your board and knife after cutting one. Your hands will have hot pepper oils so be careful about touching your eyes or lips.
